Randy's Philosophy
Randy's Cuisine is based on the diet of our hunter-gatherer ancestors - that which
nature designed us to eat for the last 2.5 million years. The gist is that if all you were
armed with was a sharp stick, you could only consume that which could be knocked
out of a tree, dug up, or killed and eaten raw - not what the agricultural revolution
has created for us to ingest.
"I have examined thousands of early-nineteenth and twentieth century
photographs of hunter-gatherers. They invariably show indigenous people
to be lean, muscular, and fit. The few medical studies of hunter-gatherers
that managed to survive into the twentieth century also confirm earlier
written accounts by explorers and frontiersmen. No matter where they
lived - in the polar regions of Canada, the deserts of Australia, or the rain
forests of Brazil - the medical records were identical. These people were
free from signs and symptoms of the chronic diseases that currently
plague us. And they were lean and physically fit. The medical evidence
shows that their body, aerobic fitness, blood cholesterol, blood pressure,
and insulin metabolism were always superior to those of the average
modern couch potato. In most cases, these values were equivalent to
those of modern-day, healthy, trained athletes."

A Quick Overview Of Our Dietary Timeline

5-7 million years ago
- our diets were very similar to our nearest relative, the
chimpanzee.

2-5 million years ago - we traded big guts for bigger brains by switching from plant
to animal food which gave us more energy and tripled our brain size. This came from
an Omega 3 fatty acid, DHA found in marrow fat, meat, organ tissue and brains.

12,000 years ago - fossil evidence shows that the Paleolithic people of England had
a diet that was almost identical to top carnivores - rich in animal protein and fat.

10,000 years ago - the Agricultural Revolution - Started in the Middle East to find
better ways to feed the growing sizes of families. We became stationary by learning
how to sow and harvest and to domesticate animals. Hello to health problems; this is
the first time in human history that we were plagued with vitamin and mineral
deficiencies and the current Syndrome X or civilization diseases. The four major
Syndrome X diseases are Type 2 diabetes, high blood pressure, heart disease and
Dyslipidemia (low HDL cholesterol, elevated triglycerides, and small-dense LDS
cholesterol).

Ancient Civilizations - were very economic and efficient. They used simple
inventions like the plow, metalwork, and sailing ships to dominate and conquer the
known world. Each civilization fell due to reaching their technological limits of both
productivity and armies because they couldn't meet the food demands of the
growing population or keep food fresh to feed their troops abroad.

1800’s - the Industrial Revolution - introduction of refined sugar, canning, refined
white flour, high fructose corn syrup, additives, preservatives, coloring agents, and
emulsifiers. These new products and industries were created in direct relation to
both solving the problem of how to feed troops during war times and the urban
population growth because we no longer lived where the food was produced.

1950’s - were simpler days and we began trying to find ways to combat health
concerns by “finding simple solutions for complicated problems.” So, we linked heart
disease to saturated fats. We lumped them all together and red meat became the
scapegoat. The Food Industry made “healthy alternatives” and introduced new
products such as vegetable oils (too high in Omega 6 polyunsaturated fats & trans
fatty acids); replaced saturated fats with starchy carbohydrates (bread, potatoes,
and cereals). Thus our Glycemic Loads (GL), which equals the glycemic index times
the carbohydrate content of our foods, skyrocketed. A high GL = high insulin, blood
glucose, and LDL.


WHY CERTAIN FOODS ARE BAD FOR YOU

Grains:
(wheat, corn, rice, oats, barley, rye, and many others). Without milling and
long cooking all are inedible to humans. When ground, raw grain becomes raw flour
and fiber - just add water and you have paper-mache, which if ingested will cause
severe digestive problems. Most grains are agricultural mutants from breeding
practices and have no botanical equivalent in the wild. All the fiber you need can be
found in the veggies, fruits, & nuts you’ll be eating which also contain many valuable
antioxidants, vitamins, & minerals. Grains with large amounts of cellulose (whole
grains, bran, etc) go undigested through the human digestive system and offer no
nutritional value.

Corn: contains aflatoxin, a substance produced by asparilla rust (just one of several
types of toxin-producing rusts that can infect any grain crop). This rust is a fungus
that infects corn and other crops, such as peanuts (a legume or bean). Aflatoxins
have been linked to liver, pancreatic, and esophageal cancers. In 1998, 62% of the
Texas corn crop tested exceeded government-approved levels of aflatoxin as
reported by the Wall Street Journal’s, July 29, 1998 report and was deemed unfit for
human consumption and went to feed our livestock which we then ate so we ended
up consuming it anyway. Corn has also been directly linked to Arthritis.

Beans: are defined as seeds of legume plants and many are extremely toxic if
consumed raw, such as limas and soy. Toxic compounds called alkaloids are found
in all species of legumes. These natural pesticides protect beans from the creatures
that would eat them in the wild. Several of these toxic compounds are cyanogens
such as cyanide found in limas. Fava plants contain toxins vicine, covicine, and
isouramil. Almost all toxins are eliminated by cooking, however, why even worry
about it because you can't eat them raw.

Potatoes: poisons found in the eye and throughout the entire potato are primarily
alkaloids solanine and chaconine. A staple diet of potatoes can lead to a severe
vitamin A deficiency. Because of fungal breakouts in cultivated potatoes they are
treated with large amounts of fungicides.

Dairy: We are the only creature, once weaned from our mother’s teat, that continues
to consume milk, and from another species at that. Could you imagine a baboon
trying to suckle from a wildebeest or zebra. Worldwide people who consume milk
regularly have higher rates of osteoporosis and hip fractures compared to those
cultures who obtain their calcium from other sources such as leafy greens (Asian
cultures). Most Asians are also lactose intolerant. Magnesium deficiency, resulting in
a loss of bone density is directly related from too much calcium. Skim milk has a very
high-glycemic index (sugar content) than whole milk.

Sugar: stay away from it. We as Americans consume far too much sugar and it is
killing us. Sugar is in everything from canned meats, to breads, and even extra
sugar is added to already naturally sweet fruits. Also be wary of dried fruit which has
a much higher concentrated sugar content than its regular state. Plums to prunes,
grapes to raisins; be careful to eat only the amount that you would eat a fruit in its
hydrated, natural state. Paleolithic humans rarely consumed refined sugar and
found it only in the form of honey. The fruits they ate contained far less sugar then
most of today's fruits, which have been bred for sweetness and larger size over
hundreds of generations. Sugar promotes insulin resistance, Syndrome X diseases
and its glycemic index is very high.


What this all means to Randy

All of these findings, and many more, have inspired me to help show people that
there are many misconceptions about our paleolithic ancestors' diet and lifestyle
that...they ate poorly and sparsely, had it rough, died young, were more sickly than
we are today, spent every moment gathering food, lived in poor, nasty, and brutish
conditions and so on. Nothing could be further from the truth and it is my belief that
there are many people and companies trying to capitalize on these false beliefs as
well as your fears, health issues, and lack of understanding about human evolution,
biology and dietary intake in order to make a quick buck.

I've been going to a fitness facility for over 20 years. I used to eat a traditional
"American" diet based on grain fed meats, bread, cereal grains, pasta, potatoes and
so on. I've always felt sluggish, fatigued and even though I did lots of cardiovascular
exercises in the gym, I always felt I was holding onto a few extra pounds. Within the
first month of adopting this natural, hunter-gatherer dietary intake I shed 15 pounds,
went from a 34 waist to a 30, felt better and had more energy than ever before.
Since then I've also cut my weight training down to a mere 1/2 hour a day, for 4 days
a week and cut out cardiovascular exercises completely; now, I just walk just like I
would if I were living as one with nature. I mention all of this because it saddens me
to see the same faces and bodies, in the gym daily, who are strenuously training
with weights and joint pounding cardio and personal trainers trying to get fit. On top
of this they are taking fat loss pills, other supplements, eating "nutrition" products
and so on and they appear to be getting in worse shape every day. To me, many
look bloated, miserable and confused as to why they are not achieving a lean,
strong, muscular body when they're doing all the "right" things.

Simply put, you're not doing the "right" things and it's not your fault because you've
been misinformed. It is my fierce mission passion to empower, educate, and help as
many people as possible to make a lifestyle change based on dietary intake that will
change lives forever. I encourage you to do your own research about all the

trying to adhere to this lifestyle and who are trying to achieve optimum health. The

and increased muscularity are all 'extra meat in your pouch' if you will.

I do need to make it clear that I am not a medical doctor and as with any change to
your dietary intake or physical fitness program you should consult your physician
before you begin. I am, however, someone who through my own trial and error,
personal losses, own ailments, interests, life experiences and research, has come to
understand a practical and holistic way to help myself and others achieve a lean,
strong, healthy body. This concept is nothing new and all you need is a library card
and/or Internet access to begin your own researched path to dietary health. I also
need to make it clear that even one potato chip will thwart your results in that it will
create 'technology dependent' food cravings as well as hinder your physical results.
